Maple Spice Muffins with Crumble Topping
Crumple topping
- 1/4 cup brown sugar (60 ml)
- 1/4 cup flour (60 ml)
- 2 tbsp butter (30 ml)
Muffin batter
- 1/2 cup white sugar (125 ml)
- 1 1/4 cup flour (310 ml)
- 3/4 cup rolled oats (175 ml)
- 1 tsp salt (5 ml)
- 2 tsp baking powder (10 ml)
- 1/2 tsp cinnamon (2 ml)
- 1/4 tsp nutmeg (1 ml)
- 1/4 cup vegetable oil (60 ml)
- 2 eggs, beaten
- 1/2 cup milk (125 ml)
- 1/2 cup maple syrup (125 ml)
In a large bowl, mix together sugar, flour, oats, baking powder, cinnamon and nutmeg.
In another bowl, combine vegetable oil, eggs, milk and maple syrup.
Add to flour mixture; mix until just moistened. Fill greased or paper-lined muffin cups, ¾ full.
Sprinkle topping over muffins.
Bake at 375°F (190°C) for 20 minutes, or until golden brown.
